Processing of rye (zhit)
The operating technologies of processing of grain of rye on flour. Production of the only product demands multistage processing of raw materials and big operational expenses. Meanwhile, the mnogokomponentnost of composition of grain of rye (carbohydrates, proteins, fats, cellulose) and expediency of target use of each of these components have caused need of creation of technology of complex processing of grain of rye that allows to gain essential economic effect.
Edaphic-climatic conditions of the country are favorable for rye cultivation as the most cold-resistant grain culture, not really exacting to fertility of the soil and ripening for 1-2 weeks before other grain.
